New Year's Eve · With alcohol

Midnight Bubbles Punch recipe.

White grape juice echoes the fruit in brut sparkling wine, and a smaller measure of elderflower liqueur adds a floral note. This pale New Year’s punch is different from the cranberry-based Champagne punch: no red juice, just grape, flowers and a lemon-peel finish.

For one party batch

Ingredients

  • 4.5 cups Brut sparkling wine
  • 4.5 cups White grape juice
  • 1.5 cups Elderflower liqueur
  • 1.5 cups Soda water

Optional: Lemon twists.

Mix it well

How to make it

  1. Mix grape and elderflower

Combine the white grape juice and measured elderflower liqueur in a pitcher. Chill the base so the wine does not warm up when it is added.

  2. Prepare the lemon finish

Wash a lemon and peel thin strips with minimal white pith. Set the twists aside for individual glasses rather than steeping them in the whole batch.

  3. Pour for the toast

Shortly before the toast, gently add cold brut sparkling wine and soda water. Divide among glasses and twist the lemon peel over each one before adding it.

Serving notes

Use elderflower liqueur, not elderflower cordial, for the recipe and alcohol estimate shown. Cordial has a different sweetness and no equivalent alcohol contribution.

Make ahead

Mix the still grape-and-liqueur base and refrigerate it. Keep the wine and soda sealed until close to midnight, then assemble only as much as you plan to pour promptly.
