Birthday parties · Alcohol-free

Rainbow Sherbet Float recipe.

This birthday float is built around sherbet rather than juice. Soda meets the cold scoops and forms a creamy, foamy top, so the bowl needs more headroom than a regular punch. The colors blend as the sherbet melts; serve promptly for distinct scoops.

Rainbow Sherbet Float, served in a glass

For one party batch

Ingredients

  • 3 cups Rainbow sherbet
  • 9 cups Lemon-lime soda

Optional: Maraschino cherries.

Yield is approximate: scooped sherbet and foam change the final volume.

Check ingredient labels for dietary needs.

Mix it well

How to make it

  1. Leave space for foam

Choose a large bowl or use individual glasses, leaving generous empty space at the top. Measure the rainbow sherbet by volume; scoop size alone is not a reliable measure.

  2. Add the scoops

Place the measured sherbet in the bowl in small scoops. Keep it frozen until this point so it does not become a liquid base before the soda arrives.

  3. Pour slowly around the edges

Add chilled lemon-lime soda in several pours, pausing when the foam rises. Do not vigorously stir. Top with optional drained maraschino cherries and serve with spoons.

Serving notes

The stated yield is approximate because scooped sherbet traps air and the mixture foams. Sherbet can contain milk; check its label when serving guests with dietary restrictions.

Make ahead

Pre-scoop the sherbet onto a lined tray and keep it frozen. Chill the soda separately. Assemble only when the guests are ready to drink their floats.
